Flower of agave plant. Only comes out after ~12th year of growth and then the plant promptly dies soon afterwards. The core of the plant and roots are filled with sugary good stuff (these type aren't used for tequila though) hence the sophisticated defense mechanisms.

That path you can see between their toes is something like a 3-hour hike down and only 1/2 way down the canyon.
